Analysis of amino acid profile, total phenolic, total flavonoid content, and antioxidant activity of Barnyard millet (Echinochloa frumentacea)

Barnyard millet is an ancient crop that serves as a staple food and key component of many diets with its well-preserved nutritional properties. In this study, the amino acid profile, total phenolic content, flavonoids, and antioxidant activity were evaluated to ensure its nutritional value. The composition of amino acids was analyzed using the HPLC/DAD technique, and TPC, TFC, and TAOA were analyzed using standard methods. This study revealed the presence of aspartate, glutamate, serine, histidine, glycine, threonine, arginine, alanine, tyrosine, cystine, valine, methionine, phenylalanine, isoleucine, leucine, lysine, and proline. The amino acid concentrations range from 1.63 to 12.62 g/100g. The total antioxidant activity of barnyard millet was 562 µg/100 g, while the total phenolic and flavonoid contents were 188 mg GAE/100g and 591 mg QE/100g, respectively. This study should be considered a significant contribution to the barnyard millet, enhancing its nutrient composition and boosting its functionality through antioxidant activity.
